These Granola bars are an incredibly easy snack to make, brilliant to take to a picnic or pack in the kids lunch boxes for a home made treat.
GRANOLA BAR INGREDIENTS
- 100g butter
- 200g rolled oats
- 100g light brown sugar
- 100g sunflower seeds
- 50g desicated coconut
- 50g chopped blanched almonds
- 50g dried cherries or apricot
- 50g dried cranberries
- 4 tablespoons honey
- 1 teaspoon ground cinnamon
- Extra butter to grease baking tray
INSTRUCTIONS
- Pre-heat oven to 160C.
- Grease an 18 x 25cm square cake tin and line the bottom with a sheet of greaseproof baking paper cut to size.
- Mix together the oats, coconut, seeds, cinnamon and almonds then transfer onto a lined flat baking tray and toast in oven for about 20 minutes. Remove and set aside.
- In a saucepan over medium low heat melt butter with sugar and honey while stirring gently.
- Add the toasted mix and the dried fruit. Mix till thoroughly combined. The whole mixture needs to be coated with the butter/honey/sugar mixture evenly.
- Transfer to cake tin and spread evenly, pressing down firmly in place to ensure the mix does not crumble.
- Bake 30-35 minutes and remove from oven, allow to cool in the tin.
- Cut into individual Granola bars.
