This delicious bittersweet chocolate mousse is a rich dessert than can be made with minimal preparation a few hours before dinner.
BITTERSWEET CHOCOLATE MOUSSE RECIPE
- 300g bittersweet chocolate finely chopped
- 4 large egg yolks
- 300ml thickened cream
- 1 tablespoon cocoa powder
- 1/4 metric cup caster sugar
INSTRUCTIONS
- In a double boiler, whisk the yolks and sugar until the mix is very warm to touch (and sugar has fully dissolved).
- Remove from heat and immediately whisk in the cocoa and finely chopped chocolate. Continue to whisk until the mixture is smooth with no lumps of chocolate or cocoa.
- Transfer to a mixing bowl and allow to cool to room temperature.
- In another mixing bowl whip the cream until stiff and peaks form then fold in gently to the cooled chocolate mixture until thoroughly combined.
- Place mousse into individual serving glasses or bowls and chill for at least a few hours or overnight.
