Apricots bring a delicious alternate taste to a classic apple crumble. With a combination of fruit textures and a crispy golden crust this Apricot based crumble is sure to delight.
APRICOT AND APPLE CRUMBLE RECIPE
Filling
- 1 large tin apricot halves in syrup (approx 820g)
- 4 sweet apples peeled and diced roughly
- 1/4 teaspoon ground cinnamon
Crumble
- 1/4 cup finely ground almond meal
- 1/2 metric cup rolled oats
- 1/2 metric cup plain flour
- 1/4 metric cup Demerara sugar
- 1/2 metric cup brown sugar
- 1 tablespoon good honey
- 120g unsalted butter (cubed)
INSTRUCTIONS
- Preheat oven to 180°C.
- Drain Apricots thoroughly (keeping the syrup aside). In a large bowl mix the apricot, apple and cinnamon with 2/3 metric cup reserved syrup. Transfer to a large glass/ovenproof baking dish.
- In a mixing bowl add the flour and almond meal and rub butter into the dry ingredients until it becomes similar in texture to coarse breadcrumbs. Add oats, brown sugar, Demerara sugar and honey and mix thoroughly.
- Sprinkle the crumble mix over the top of the filling and bake for approximately 30 minutes or until you can see the crumble turning a golden brown. Remove from oven and allow to sit for 20 minutes before serving.
Serve with whipped cream or icecream
