Festive Turkey just wouldn't be the same without stuffing, here's one of our all-time favourites with a little twist from the classic recipe.
PORK, WALNUT & SAGE STUFFING INGREDIENTS
- 2 large onions finely chopped
- 100g bread crumbs
- 200 g roughly chopped walnuts (fresh ones if you can get them)
- 1 kg pork mince
- 3 large rashers bacon, roughly chopped
- Half of a fresh nutmeg grated
- 1 bunch fresh sage leaves finely chopped
- 1 tsp ground black pepper
- Large pinch salt
- Zest of half a lemon
- Juice of half an orange (and a few shavings of its zest)
- 50g butter
INSTRUCTIONS
- In a pan over a medium heat saute the onion and butter until translucent, allow to cool and tip into a large mixing bowl
- Add the breadcrumbs, walnuts, pork mince, sage and juice of half the orange to the mixing bowl.
- Add in grated nutmeg, zest of half a lemon and a few gratings of the orange.
- Mix all ingredients together thoroughly with your hands.
- Stuff your turkey with the mixture prior to cooking.
