This decadent eggnog ice cream is perfect for summer OR winter, it is basically an ultra rich vanilla with lashings of Christmas cheer.
*It is important to note the alcohol levels in this recipe are kept to a minimum for a reason, too much alcohol will cause the ice cream mixture not to set. The alcohol content of most traditional eggnog recipes is too high to set properly when churning.
EGGNOG ICE CREAM INGREDIENTS
- 4 large egg yolks
- 2 cups full cream milk
- 1 cup thickened cream
- 1 teaspoon vanilla extract
- 1/2 cup sugar
- 20 ml whisky
- 10 ml white rum
- Optional 1 teaspoon freshly grated nutmeg
INSTRUCTIONS
- In a mixing bowl; whisk the egg yolks and sugar (and nutmeg if you want) until mixed thoroughly then set aside.
- In a medium saucepan over medium high heat combine milk and cream, whisk gently till it starts to simmer (don't boil).
- Remove from the heat immediately and pour gradually into the egg yolk and sugar mixture, whisking continuously to keep the mixture smooth.
- Set aside and allow to cool unassisted to room temperature then chill for a couple of hours in the fridge.
- Churn in an ice cream maker as per your device's instructions.
TIP: This eggnog ice cream is beautifully creamy and soft when served straight after churning!
