Shortbread is such an easy treat to make that it is a definite must for festive entertaining. The magic ratio for perfect shortbread is 1:2:3 (sugar:butter:flour) as you can see from the ingredients listed below in our recipe.
EASY SHORTBREAD INGREDIENTS
- 200g caster sugar
- 400g cubed unsalted butter
- 600g plain flour
- *Extra caster sugar for dusting
INSTRUCTIONS
- Preheat oven to 180°C (175°C in a fan forced oven)
- Mix the flour and sugar together in a large bowl then rub in the butter with your fingers till it resembles fine crumbs then and squash and pat it into a dough (don't knead it or it will become very dense and not crumbly) The less the dough is worked the better the texture of the shortbread will be.
- Directly on a flat baking tray lined with greaseproof paper (so you won't need to move it before putting it into the oven) gently roll out the dough until about 1cm thick.
- Score the dough into finger sized rectangles with a knife to make the shortbread easier to break off when baked.
- Sprinkle with remaining caster sugar and bake for 35 to 40 minutes or until they turn slightly golden. Leave to cool for 5 minutes before turning out onto a wire rack and separating the shortbread pieces.
- Space out the shortbread pieces to allow an air-gap and return to the oven for a further 15-20 min to crisp further. Remove and turn out onto wire rack again, allowing them to cool completely this time.
- Store in an airtight container.
