Shortbread is such an easy treat to make that it is a definite must for festive entertaining.  The magic ratio for perfect shortbread is 1:2:3 (sugar:butter:flour) as you can see from the ingredients listed below in our recipe.

EASY SHORTBREAD INGREDIENTS
  • 200g caster sugar
  • 400g cubed unsalted butter
  • 600g plain flour
  • *Extra caster sugar for dusting

INSTRUCTIONS
  1. Preheat oven to 180°C (175°C in a fan forced oven)
  2. Mix the flour and sugar together in a large bowl then rub in the butter with your fingers till it resembles fine crumbs then and squash and pat it into a dough (don't knead it or it will become very dense and not crumbly)  The less the dough is worked the better the texture of the shortbread will be.
  3. Directly on a flat baking tray lined with greaseproof paper (so you won't need to move it before putting it into the oven) gently roll out the dough until about 1cm thick.
  4. Score the dough into finger sized rectangles with a knife to make the shortbread easier to break off when baked.
  5. Sprinkle with remaining caster sugar and bake for 35 to 40 minutes or until they turn slightly golden.  Leave to cool for 5 minutes before turning out onto a wire rack and separating the shortbread pieces.
  6. Space out the shortbread pieces to allow an air-gap and return to the oven for a further 15-20 min to crisp further.  Remove and turn  out onto wire rack again, allowing them to cool completely this time.
  7. Store in an airtight container.
