CLASSIC EGGNOG INGREDIENTS
- 6 large eggs (separate the eggs into whites and yolks)
- 2 cups full cream milk
- 600ml thick pouring cream
- 1 cup white sugar
- 1 teaspoon vanilla essence (or 1/2 teaspoon vanilla extract)
- 1/2 teaspoon nutmeg (ground)
- 1/2 cup brandy
- 1/4 cup dark rum
INSTRUCTIONS
- Beat yolks and sugar together in a bowl until the consistency is creamy, add vanilla essence or extract, and the ground nutmeg, continue beating till well mixed. Place aside.
- In a second bowl beat egg whites vigorously until stiff peaks form. Fold in the yolk mixture, then gradually add the pouring cream and milk.
- Continue folding the mixture and gradually start to add the brandy and rum a little at a time until mixed well.
- Eggnog can be served immediately or left to chill for later in the fridge (if you decide to refrigerate for later, mix it again just before serving.
- Best served with an extra sprinkle of ground nutmeg to taste.
